Grandmas Scalloped Rhubarb: A throwback recipe (SIDE-DISH)

My grandma used to grow rhubarb in her backyard in Michigan. Along the back fence the beautiful leafy tops and scarlet stalks begged to be made into pies and jams.

I found this recipe in her recipe box, the index card in her handwriting had yellowed and tattered around the edges.

Must have been one she used regularly.

Scalloped Rhubarb

This recipe is fairly easy and straightforward. Because rhubarb is very tart, sugar is a must!

Chop chop, top and bake. Easy peasy.

Ingredients needed:

  • 4 cups rhubarb, washed and chopped into bite size pieces
  • 1 1/3 cup sugar
  • 3 cups dry bread cubes
  • butter

directions

  • mix together 4 cups chopped rhubarb and 1/2 cup of the sugar. put into a 9×13 casserole dish.
  • in a food processor, blend the dried bread cubes with 1/2 cup sugar.
  • spread topping evenly over rhubarb in pan
  • sprinkle the top with remining 1/3 cup sugar
  • place several small pats of butter evenly over top
  • lightly sprinkle with water

bake at 350 degrees for 1 hour.

THROWBACK RECIP: Great Grandma Ruby's Creole Cake

 


What is Creole Cake?

Creole cake is very similar to a German Chocolate Cake. The Chocolate Creole cake might have raisins and dates as well depending on the cook who made it.. Where Ruby lived her whole life she probably didn’t have access to fancy things like chopped dates. So this recipe is date and raisin free.

blend together:

  • EGGS (2) , slightly beaten
  • WHITE SUGAR (2 cups)
  • VEGETABLE OIL (1/2 cup) – Ruby swore by Wessom

add:

  • WHITE FLOUR (2 cups)
  • SALT (1/2 teaspoon)
  • COCOA POWDER (2 Heaping Tablespoons)

mix well and add:

  • VANILLA (1 teaspoon)
  • BUTTERMILK(1/2 cup)
  • BAKING SODA (1 teaspoon dissolved in a cup of boiling water)

Pour into Greased 9×13 pan and bake in a preheated oven at 350 degrees. 30 minutes.

While Cake is baking , prepare the icing.

icing:

  • BROWN SUGAR ( 1 1/2 cups)\
  • FLAKED COCONUT ( 1 cup)
  • OLEO (3/4 stick. Can use margarine or butter)
  • CHOPPED PECANS (1/2 cup)
  • PET MILK (1 small can)

Mix well and pour over hot cake in the pan.

BROIL 3-5 minutes. Watch closely so it doesn’t scorch.
